Apple, Carrot and Walnut Muffins
Moist, sweet, spicy and able to be frozen, these are a fantastic muffin for breakfast on the go or adding to lunchboxes for a tasty treat.

What do I need?
- 2 cups plain flour
- ¾ cup caster sugar
- 2 tsp bicarbonate of soda
- ½ tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 3 eggs
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 2 cups grated carrot
- 1 cup peeled and grated apple
- ½ cup chopped walnuts
- 12 walnut halves
How do I make it?
- Preheat oven to 180C.
- Grease a 12 hole muffin tin.
- Combine flour, sugar, bicarb, salt, cinnamon, nutmeg, eggs, oil and vanilla in a mixing bowl and stir well.
- Fold in carrots, apple and chopped walnuts.
- Divide mixture between muffin holes and top each with a walnut half.
- Bake for 20-25 minutes or until a skewer inserted comes out clean.
