Fruity Oat Muffins

What do I need?
- 1 cup rolled oats
- 1 cup milk
- 1 cup plain wholemeal flour
- Pinch of salt
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- 1 tsp ground cardamom
- ½ cup brown sugar
- 1 egg, beaten
- ¼ cup olive oil
- 1 tsp vanilla extract
- ½ cup grated carrot
- ½ cup freshly diced pear
- ½ cup freshly diced apple
How do I make it?
- Preheat oven to 200C. Grease a 12-hole muffin tin and set aside.
- Add oats to a large bowl with milk, stir and set aside for 15 minutes.
- In a separate bowl, whisk flour, baking powder, bicarb, salt and cardamom. Set aside.
- Add brown sugar, egg, olive oil, vanilla, to the oat mixture and mix well. Pour in flour mixture and stir until just combined. Fold in carrot, pears and apple.
- Spoon mixture into the muffin tin and bake for 12 minutes. Remove from oven and set aside to cool on a wire rack.
