Apple Oatmeal Biscuits

Sweet, chewy and delicious, these biscuits are great for lunchboxes, afternoon tea or sharing with friends.

What do I need?

  • 125 g plain flour
  • ½ tsp bicarbonate of soda
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 115 g unsalted butter, softened
  • 100 g brown sugar
  • 50 g caster sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 90 g rolled oats
  • 1 cup finely chopped Granny Smith apple, peeled
  • ½ cup raisins
  • 2 tbsp sesame seeds

How do I make it?

  1. Preheat the oven to 180C. Line two baking trays with baking paper.
  2. Combine flour, bicarb, cinnamon, and salt in a medium bowl. Set aside.
  3. Add butter and both sugars to the bowl of an electric mixer. Beat until the mix is light and fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Add oats, apple, raisins, and sesame seeds to the mixture and stir to combine.
  6. Drop rounded tablespoons of dough onto the prepared baking trays, spacing about 5-centimetres apart.
  7. Bake for 10 - 12 minutes, or until edges are lightly golden and centres are just set.
  8. Cool on the baking tray for 5 minutes before transferring to a wire rack to cool completely.
