Apricot Muesli Slice

This apricot and muesli slice is moist and easy to make. Deliciously sweetened by the dried apricots and sultanas, it makes a great addition to any lunch box.

What do I need?

  • 150g butter
  • 2 tbsp honey
  • 200g dried apricots, chopped
  • 1 cup self-raising flour
  • 1 cup muesli (untoasted)
  • 1/2 cup sultanas or raisins
  • 1/2 cup caster sugar
  • 2 eggs, lightly beaten

How do I make it?

  1. Preheat the oven to 180°C. Line a 20cm x 20cm pan with baking paper and set aside.
  2. Melt the butter for 30 seconds in the microwave or over a low heat in a saucepan. Stir in the honey and leave to cool.
  3. In a bowl, combine the flour, sugar, muesli, sultanas and apricots.
  4. Mix in the eggs and cooled honey/butter mixture.
  5. Pour into the baking pan and bake for 25-30 minutes.
