Lemon Slice
This Lemon Slice is all that and more! Seriously, it is so delicious that you absolutely have to make it, although be warned, you will become hooked! It will keep in the fridge for up to a week, but we’re pretty sure it won’t last that long.

Makes approximately 20 pieces
What do I need?
- 80 g unsalted butter, melted
- 250 g sweetened condensed milk
- 250 g sweet biscuits such as Milk Coffee or Marie
- 1 cup desiccated coconut
- Juice and zest of 1 lemon
For the icing
- 3 cups pure icing sugar
- 90 g softened unsalted butter
- 75 mL lemon juice
- 3 tbsp desiccated coconut
How do I make it?
- Grease and line a 18 x 28 centimetre slice tin with baking paper.
- Crush biscuits in a food processor to a fine crumb. Add biscuit crumbs to a large bowl with coconut, lemon rind, butter, condensed milk and lemon juice. Mix until well combined.
- Tip mixture into the prepared slice tin and use the back of a spoon to evenly distribute it, then refrigerate.
- Make the icing by adding icing sugar, softened butter and lemon juice to a bowl. Whisk together until it comes together to make a thick, but spreadable icing. If the mixture is too thick add extra lemon juice, and if it is too runny add extra icing sugar.
- Remove slice from the fridge and spread icing over the top. Sprinkle with coconut and return to the fridge to set, for 2-3 hours.
- When set, cut slice into pieces and store in an airtight container in the fridge.
