Kourabiedes (Greek shortbread)
These classic Greek treats are perfect for the festive season, indeed for us it wouldn’t be Christmas without them. They are buttery and sweet and quite simply, delicious! These will keep in an airtight container for up to one week.

What do I need?
- 2 ¼ cups plain flour
- ½ tsp salt
- 1 cup almonds, finely chopped
- 250g butter at room temperature
- ½ cup icing sugar for the dough plus additional 1 cup for dusting
- 1 tsp vanilla extract
- 3 tbsp orange flower water
How do I make it?
- Preheat oven to 180C.
- Cream butter, vanilla and ½ cup icing sugar using an electric blender.
- Sift flour and salt into a bowl.
- Add the almonds and stir through.
- Add the flour mixture to the butter and beat on medium speed until smooth.
- Chill the dough in the fridge for 30 minutes to make it easier to work with.
- Roll tablespoons of mixture into balls and then roll into 5 centimetre lengths and form into crescent shapes.
- Place crescents on a baking tray lined with baking paper and bake for 10-15 minutes or until they are just starting to colour.
- Remove from oven, transfer to wire rack and, while warm, sprinkle with orange flower water and dust with icing sugar.
- Leave to cool and when completely cooled, dust again with icing sugar.
