International Women’s Day Cupcakes
Celebrate International Women’s Day on 8 March with friends, family or colleagues with these chocolate-flavoured cupcakes decorated with purple buttercream. Purple is an official colour of International Women’s Day.

What do I need?
For the cupcakes
- ¾ cup boiling water
- ¾ cup cocoa powder
- 170 g butter
- 2 cups caster sugar
- 1 tsp table salt
- 1 tsp vanilla extract
- 3 free range eggs
- 2 ½ cups plain flour
- 1 tsp bicarbonate of soda
- 1 tsp baking powder
- 1 cup buttermilk
For the Purple Buttercream
- 360 g butter, softened
- 680 g icing sugar
- 1 tbsp vanilla extract
- 2 – 3 tbsp milk
- Purple food colouring
- Blueberries to garnish (optional)
How do I make it?
- Preheat oven to 180C.
- Whisk together boiling water and cocoa powder, then cover and set aside.
- Cream together butter and sugar with an electric mixer. Add salt and vanilla. Add eggs, one at a time, beating well after each addition. Sift flour, bicarbonate of soda and baking powder together and add to mixture. Pour in buttermilk and stir to combine, then add the cocoa and water mixture and mix until combined.
- Spoon batter into cupcake cases and bake for 20 to 25 minutes. Remove from oven and set aside to cool completely before decorating.
- To make the Purple Buttercream, beat butter in an electric mixer for 5 minutes. Slowly add icing sugar and continue to beat until it is fully incorporated. Add vanilla, milk and food colouring and mix well. Turn the mixer onto medium-high speed and beat for a further 5 minutes.
- Decorate cooled cupcakes with Purple Buttercream and garnish with blueberries.
