Lemon & Poppy Seed Biscuits
Bake a batch of these lemony biscuits to enjoy at home or to share with friends and family. Pop them in a cute gift box and they also make a lovely homemade gift for someone special.

What do I need?
- 300 g plain flour
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp salt
- 225 g unsalted butter
- 200 g caster sugar
- 1 egg
- Zest of 2 lemons
- 2 tbsp freshly squeezed lemon juice
- 2 tsp vanilla extract
- 3 tsp poppy seeds, divided
How do I make it?
- Preheat oven to 180C.
- Line 2 baking trays with baking paper.
- Combine flour, baking powder, bicarb, and salt in a bowl.
- Cream butter and sugar in an electric mixer until light and fluffy. Add egg and beat until combined. Add lemon zest and juice, vanilla, and 2 teaspoons poppy seeds and fold through. Add flour mixture and mix until combined.
- Spoon mixture onto prepared trays – use about 1 ½ tablespoons of mixture for each biscuit, and leave room between biscuits to allow for them to spread during cooking.
- Sprinkle tops of biscuits with the reserved poppy seeds and bake for 12 minutes or until golden on the edges.
- Allow to cool on baking trays.
- Biscuits will keep in an airtight container for up to 1 week.
