Chocolate Swirl Meringues

Crisp on the outside and delicately chewy within, these Meringues are marbled with luscious swirls of melted dark chocolate, to create a treat that looks and tastes divine.

What do I need?

  • 6 large egg whites
  • ½ tsp cream of tartar
  • 1 ½ cups caster sugar
  • 150 g dark chocolate, melted and cooled slightly

How do I make it?

  1. Preheat oven to 140C,
  2. Line 2 baking trays with baking paper.
  3. Beat egg whites in the bowl of a stand mixer on medium speed until soft peaks form.
  4. Sift in the Cream of Tartar and beat to combine.
  5. Gradually add sugar, one tablespoon at a time.
  6. When all sugar has been added, increase speed to high and beat until the egg whites are thick and glossy and have formed stiff peaks.
  7. Add melted chocolate to the mixture and gently fold through twice. Do not mix more than this or the meringues will become a solid colour rather than having the swirl appearance.
  8. Spoon mixture onto baking trays, leaving a 10-centimetre gap between them.
  9. Bake for 1 ¼ hours on the middle rack of the oven. Turn oven off and leave meringues in oven for 30 minutes before setting aside to cool completely on a wire rack.
  10. Store meringues in an airtight container for up to 2 weeks.
