
Chocolate Swirl Meringues
Crisp on the outside and delicately chewy within, these Meringues are marbled with luscious swirls of melted dark chocolate, to create a treat that looks and tastes divine.

What do I need?
- 6 large egg whites
- ½ tsp cream of tartar
- 1 ½ cups caster sugar
- 150 g dark chocolate, melted and cooled slightly
How do I make it?
- Preheat oven to 140C,
- Line 2 baking trays with baking paper.
- Beat egg whites in the bowl of a stand mixer on medium speed until soft peaks form.
- Sift in the Cream of Tartar and beat to combine.
- Gradually add sugar, one tablespoon at a time.
- When all sugar has been added, increase speed to high and beat until the egg whites are thick and glossy and have formed stiff peaks.
- Add melted chocolate to the mixture and gently fold through twice. Do not mix more than this or the meringues will become a solid colour rather than having the swirl appearance.
- Spoon mixture onto baking trays, leaving a 10-centimetre gap between them.
- Bake for 1 ¼ hours on the middle rack of the oven. Turn oven off and leave meringues in oven for 30 minutes before setting aside to cool completely on a wire rack.
- Store meringues in an airtight container for up to 2 weeks.
