2 ripe mangoes, peeled and chopped into chunks
1 cup Greek yoghurt
Zest of 1 lime, divided
Juice of ½ lime
Pinch of salt
½ cup coconut flakes, lightly toasted
How do I make it?
Add mangoes to a food processor and blitz to form a thick puree. Divide between serving bowls.
Set aside a tablespoon of the lime zest for garnish, then combine remaining zest with the yoghurt, lime juice and salt in a small bowl and mix well.
Dollop yoghurt mixture onto the mango and garnish with reserved lime zest and coconut flakes.
