Mexican Chicken Schnitzel
Spruce up your schnitzel game with the fresh flavours of a Mexican inspired salsa. We’ve kept our recipe simple but you can also add some red kidney beans or black beans and a dollop of sour cream if desired.

What do I need?
- 4 Tasmanian chicken schnitzels
- 2 avocados, flesh diced
- ¼ red onion
- 1 punnet Cherry or Angel tomatoes, quartered
- Juice of 1 lime
- 4 tbsp fresh coriander leaves, finely chopped
How do I make it?
Cook chicken schnitzels in a frying pan over medium-high heat.
While schnitzels are cooking, combine all other ingredients in a bowl, toss well to combine and set aside.
Serve schnitzels topped with avocado mixtures.
