4 Tasmanian chicken schnitzels
2 avocados, flesh diced
¼ red onion
1 punnet Cherry or Angel tomatoes, quartered
Juice of 1 lime
4 tbsp fresh coriander leaves, finely chopped
How do I make it?
Cook chicken schnitzels in a frying pan over medium-high heat.
While schnitzels are cooking, combine all other ingredients in a bowl, toss well to combine and set aside.
