Blueberry and Honey Pikelets
Fresh blueberries snuggled into pikelets make a perfect lunchbox treat.

What do I need?
- ¾ cup self-raising flour
- ½ tbsp caster sugar
- ½ cup milk
- 1 small egg, lightly whisked
- 1 tbsp honey
- 30g butter, melted
- 1 tbsp vegetable oil
- 120g punnet blueberries
How do I make it?
- Sift flour into a large bowl and stir through the sugar.
- Make a well in the centre of the dry ingredients and add the milk, egg and honey. Gradually whisk the liquids into the flour until combined and smooth.a
- Heat a large non-stick frying pan on medium heat. Brush with melted butter and a little oil. Drop tablespoonfuls of pikelet batter into the pan, allowing room for spreading. Top each pikelet with 3-4 blueberries. Cook for 2-3 minutes, until bubbles appear on surface. Turn and cook for a further 1 minute, until golden. Transfer to a wire rack to cool. Wipe the pan clean and repeat in batches until all the mix is cooked.
