Summer Salad
Everyone loves a pasta salad. It's great for feeding a crowd and super-simple to make. While the pasta cooks you can prepare the other ingredients. We serve this Summer Salad cold but if you prefer it slightly warm, you can add the ingredients to the pasta straight from the pot.

What do I need?
- 500g farfalle pasta
- 1 cucumber, diced
- ½ cup chopped green capsicum
- 2 medium tomatoes, chopped
- ½ cup fresh parsley, chopped
- ½ cup feta, crumbled
For the dressing
- ¼ cup balsamic vinegar
- ¼ cup olive oil
- 1 teaspoon salt
- 1 tablespoon Dijon mustard
- ¼ cup freshly squeezed lemon juice
How do I make it?
- Cook farfalle in a pot of boiling water until al dente.
- While the pasta is cooking prepare vegetables by cutting and combine in a large bowl with the feta.
- Whisk the dressing ingredients together in a small bowl and pour over the top of the vegetables and cheese.
- When pasta is cooked, strain and add to the vegetables and dressing. Stir to combine and then refrigerate until ready to serve.
