Tacos Al Pastor
World Taco Day on 4 October is all the encouragement we need to indulge in a tasty taco, or two! This recipe for Tacos Al Pastor is based on the popular central Mexican dish and features marinated pork topped with pineapple. It’s a wonderful melding of sweet and savoury flavours, that will leave you wanting more.

What do I need?
- 2 tsp minced garlic
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp table salt
- ¼ tsp freshly ground black pepper
- ½ tsp chilli flakes, or to taste
- 1 tbsp smoky paprika
- 1 tbsp honey
- ¼ cup pineapple juice
- ¼ cup white vinegar
- ½ cup water
- 1 kg pork loin steaks
- 12 tortillas, warmed
- 1 pineapple, peeled and roughly diced
- ¼ cup coriander leaves, finely chopped
How do I make it?
- Make marinade by adding garlic, oregano, cumin, salt, pepper, paprika, honey, pineapple juice, vinegar, and water to a small saucepan over medium heat. Bring to a simmer, then cook for 3 minutes. Remove from heat and set aside to cool for 15 minutes.
- Pour cooled marinade ingredients into a food processor and blitz until smooth. Add pork steaks to a large bowl and cover with marinade. Toss to ensure pork is well coated, then cover and refrigerate for at least 1 hour.
- Preheat barbecue grill or non-stick frying pan to medium high heat. Add pork and cook for 5 minutes, then flip and cook for a further 4-5 minutes, or until the pork is cooked through.
- Roughly chop pork into bite sized pieces, then serve it on tortillas topped with pineapple and coriander.
