Winter Salad with Apple Vinaigrette

Dressed with our delicious tangy homemade Apple Vinaigrette, this vegetarian salad is fantastic served just as it or alongside your favourite protein.

What do I need?

  • ½ cup bulgur
  • ½ cup quinoa
  • 2 cups vegetable stock
  • Pinch of salt
  • 2 blood oranges, peeled and segmented
  • 1 avocado, diced
  • 1 cup hazelnuts, roughly chopped
  • 2 cups baby spinach leaves
  • ½ cup pomegranate arils
  • For the Dressing
  • ½ cup olive oil
  • 90 mL apple juice
  • 60 mL apple cider vinegar
  • 1 tsp Dijon mustard
  • 2 tsp freshly squeezed lemon juice
  • 2 tsp honey
  • Pinch of salt
  • ½ tsp freshly ground black pepper

How do I make it?

Place bulgur, quinoa, stock and salt in a large saucepan over medium heat and stir. Bring to the boil, add a lid and reduce heat to low and cook until the liquid is absorbed. Leave to rest, covered for 10 minutes off the heat, then fluff with a fork.
