Peach and Green Bean Kimchi

What do I need?
- 6 yellow or white peaches, stone removed and chopped
- 2 cups green beans, chopped 4 tbsp salt
- 4 tbsp chilli flakes
- 2 cloves garlic, minced
- 2-centimetre piece of fresh ginger, grated
- 4 tbsp soy sauce
- 4 tbsp caster sugar
- 4 tbsp apple cider vinegar
- 2 tbsp sesame seeds
How do I make it?
- Add peaches and beans to a bowl and sprinkle with salt. Cover with a clean tea towel and set aside for 1 hour.
- Meanwhile, whisk chilli flakes, garlic, ginger, soy sauce, caster sugar, and apple cider vinegar together in a large bowl. Set aside.
- Rinse peaches and beans under cold running water and drain well. Add peaches and beans to the bowl and stir to coat with the sauce.
- Serve garnished with sesame seeds.
