Peach and Green Bean Kimchi

What do I need?

  • 6 yellow or white peaches, stone removed and chopped
  • 2 cups green beans, chopped 4 tbsp salt
  • 4 tbsp chilli flakes
  • 2 cloves garlic, minced
  • 2-centimetre piece of fresh ginger, grated
  • 4 tbsp soy sauce
  • 4 tbsp caster sugar
  • 4 tbsp apple cider vinegar
  • 2 tbsp sesame seeds

How do I make it?

  1. Add peaches and beans to a bowl and sprinkle with salt. Cover with a clean tea towel and set aside for 1 hour.
  2. Meanwhile, whisk chilli flakes, garlic, ginger, soy sauce, caster sugar, and apple cider vinegar together in a large bowl. Set aside.
  3. Rinse peaches and beans under cold running water and drain well. Add peaches and beans to the bowl and stir to coat with the sauce.
  4. Serve garnished with sesame seeds.
