What do I need?
- 100 g pine nuts
- 750 g cherry tomatoes, halved
- 1 large red onion, finely sliced
- 100 g capers, drained
- ½ bunch basil leaves
- ½ cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp caster sugar
- 1 tsp dried oregano
- Salt, to taste
- Freshly ground black pepper, to taste
How do I make it?
- Add pine nuts to a frying pan over medium heat. Cook, stirring until they start to turn a light golden brown, then remove from heat and set aside to cool.
- When pine nuts have cooled, add tomatoes, onion, pine nuts, capers and basil leaves to a large bowl and toss to combine.
- Mix olive oil, red wine vinegar, caster sugar, and oregano in a small bowl. Season to taste and pour over salad just before serving.
