Green Lentil Salad with Lemon Vinaigrette

Fresh and light with a zesty lemon vinaigrette, this lentil salad will become a summer favourite.

What do I need?

  • 1 cup green lentils
  • 1 litre water
  • 1 bay leaf
  • 1 cucumber, finely diced
  • ½ red onion, finely diced
  • 1 red chilli, seeds removed, finely diced
  • ½ bunch flat leaf parsley, finely chopped

For the Lemon Vinaigrette

  • 2 ½ tbsp olive oil
  • 1 ½ tbsp lemon juice
  • Zest of ½ a lemon
  • ½ tsp Dijon mustard
  • ¼ tsp honey
  • 1 garlic clove, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste

How do I make it?

  1. Rinse lentils under cold running water.
  2. Add 1 litre water, lentils, and bay leaf to a medium saucepan over high heat. When the water comes to the boil, reduce heat to low, cover with a lid and let simmer for 15 – 20 minutes or until the lentils are soft.
  3. Drain lentils, discard bay leaf, and set lentils aside to cool.
  4. Meanwhile make the dressing by adding all ingredients to a bowl and whisking well.
  5. When lentils have cooled add them to a bowl with cucumber, onion, chilli, and parsley and toss to combine. Pour over vinaigrette and serve.
