Green Lentil Salad with Lemon Vinaigrette
Fresh and light with a zesty lemon vinaigrette, this lentil salad will become a summer favourite.

What do I need?
- 1 cup green lentils
- 1 litre water
- 1 bay leaf
- 1 cucumber, finely diced
- ½ red onion, finely diced
- 1 red chilli, seeds removed, finely diced
- ½ bunch flat leaf parsley, finely chopped
For the Lemon Vinaigrette
- 2 ½ tbsp olive oil
- 1 ½ tbsp lemon juice
- Zest of ½ a lemon
- ½ tsp Dijon mustard
- ¼ tsp honey
- 1 garlic clove, minced
- Salt, to taste
- Freshly ground black pepper, to taste
How do I make it?
- Rinse lentils under cold running water.
- Add 1 litre water, lentils, and bay leaf to a medium saucepan over high heat. When the water comes to the boil, reduce heat to low, cover with a lid and let simmer for 15 – 20 minutes or until the lentils are soft.
- Drain lentils, discard bay leaf, and set lentils aside to cool.
- Meanwhile make the dressing by adding all ingredients to a bowl and whisking well.
- When lentils have cooled add them to a bowl with cucumber, onion, chilli, and parsley and toss to combine. Pour over vinaigrette and serve.
