Good for You Salad

This salad is packed full of fresh and healthy ingredients and it tastes delicious so it’s a win/win!

What do I need?

  • ½ large butternut pumpkin, peeled and cut into approximately 1 ½ centimetre cubes
  • ¼ cup olive oil, plus 2 tablespoons, divided
  • 1 x 400 g can chickpeas, drained
  • 1 apple, cored and sliced
  • 50 g pepitas
  • 50 g dried cranberries
  • 1 tbsp lemon juice
  • 1 tsp maple syrup
  • Pinch each of salt and freshly ground black pepper

How do I make it?

  1. Preheat oven to 180C.
  2. Add pumpkin and 2 tablespoons olive oil to a roasting pan and season with salt and pepper. Roast for 30 minutes.
  3. Wash and roughly chop the kale and add to a serving bowl. Add chickpeas, apple, pepitas, cranberries and pumpkin.
  4. Add remaining olive oil, lemon juice and maple syrup to a small bowl with salt and pepper and whisk to combine.
  5. Pour dressing over the salad immediately before serving.
