Good for You Salad
This salad is packed full of fresh and healthy ingredients and it tastes delicious so it’s a win/win!

What do I need?
- ½ large butternut pumpkin, peeled and cut into approximately 1 ½ centimetre cubes
- ¼ cup olive oil, plus 2 tablespoons, divided
- 1 x 400 g can chickpeas, drained
- 1 apple, cored and sliced
- 50 g pepitas
- 50 g dried cranberries
- 1 tbsp lemon juice
- 1 tsp maple syrup
- Pinch each of salt and freshly ground black pepper
How do I make it?
- Preheat oven to 180C.
- Add pumpkin and 2 tablespoons olive oil to a roasting pan and season with salt and pepper. Roast for 30 minutes.
- Wash and roughly chop the kale and add to a serving bowl. Add chickpeas, apple, pepitas, cranberries and pumpkin.
- Add remaining olive oil, lemon juice and maple syrup to a small bowl with salt and pepper and whisk to combine.
- Pour dressing over the salad immediately before serving.
