Cucumber, Radish, and Green Pea Salad

What do I need?
- 6 large iceberg lettuce leaves, torn
- A large handful of rocket leaves, torn
- 4 radishes, finely sliced
- 1 continental cucumber, thinly sliced
- 250 g freshly shelled peas
- Half a bunch of fresh dill, leaves picked
For the Dressing
- 1/3 cup sour cream
- 4 tbsp water
- 2 tbsp fresh dill, chopped
- 1 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp salt
- ¼ tsp freshly ground black pepper
How do I make it?
- Combine lettuce, rocket, radishes, cucumber, peas, and dill leaves in a large bowl.
- Mix sour cream, water, 2 tablespoons dill, olive oil, lemon juice, salt, and pepper in a small bowl and whisk.
- Pour dressing over salad and toss to coat. Serve immediately.
TOP TIPS
- If fresh peas are not available, you can replace with cooked and chilled frozen peas, or drained canned peas.
