Fiesta Corn

What do I need?
- 500 g corn kernels
- 1 tsp unsalted butter
- ½ cup red onion, diced
- ½ green capsicum, diced
- ½ red capsicum, diced
- 1 green chilli, seeds removed, diced
- Salt, to taste
- Freshly ground black pepper, to taste
How do I make it?
- Melt butter in a large frying pan over medium-high heat.
- Add onion and capsicums and cook, stirring for 3 minutes. Add corn to the frying pan and stir to combine. Add chilli, salt, and pepper and cook for a further 2 minutes, then remove from heat and serve.
