Oi Muchim (Korean Cucumber Salad)
Cool, crunchy, and refreshing, this salad features crispy slices of cucumber in a spicy dressing. Enjoy with your favourite protein or just on its own.

What do I need?
- 500 g cucumber, sliced
- 1 tsp salt
- 1 clove garlic, minced
- 1 tsp soy sauce
- 3 tbsp rice wine vinegar
- 1 tbsp caster sugar
- 1 tbsp sesame oil
- 2 spring onions, thinly sliced
- 1 tsp chilli flakes (add more if you prefer more spice)
- 2 tbsp toasted sesame seeds
How do I make it?
- Add chopped cucumber to a colander and sprinkle with salt. Set aside to drain for 30 minutes. This will help the cucumbers release water to make the salad crisper.
- Add garlic, soy sauce, rice wine vinegar, sugar, and sesame oil, to a large bowl and whisk to combine.
- Rinse cucumber slices and pat dry with paper towel. Add cucumber, spring onions, chilli flakes, and half the sesame seeds to the bowl and toss to coat.
- Spoon onto a serving plate and scatter with remaining sesame seeds, then serve.
