Oi Muchim (Korean Cucumber Salad)

Cool, crunchy, and refreshing, this salad features crispy slices of cucumber in a spicy dressing. Enjoy with your favourite protein or just on its own.

What do I need?

  • 500 g cucumber, sliced
  • 1 tsp salt
  • 1 clove garlic, minced
  • 1 tsp soy sauce
  • 3 tbsp rice wine vinegar
  • 1 tbsp caster sugar
  • 1 tbsp sesame oil
  • 2 spring onions, thinly sliced
  • 1 tsp chilli flakes (add more if you prefer more spice)
  • 2 tbsp toasted sesame seeds

How do I make it?

  1. Add chopped cucumber to a colander and sprinkle with salt. Set aside to drain for 30 minutes. This will help the cucumbers release water to make the salad crisper.
  2. Add garlic, soy sauce, rice wine vinegar, sugar, and sesame oil, to a large bowl and whisk to combine.
  3. Rinse cucumber slices and pat dry with paper towel. Add cucumber, spring onions, chilli flakes, and half the sesame seeds to the bowl and toss to coat.
  4. Spoon onto a serving plate and scatter with remaining sesame seeds, then serve.
