Watermelon Salad with Halloumi and Mint

This simple combination of watermelon, halloumi and mint is just so very delicious that you’ll keep it on rotation all summer long.

What do I need?

  • 250 g halloumi, thinly sliced
  • 1 ½ tbsp olive oil, divided
  • 1 kg watermelon flesh, cut into triangles
  • Bunch of mint, roughly chopped
  • 1 ½ tbsp balsamic vinegar
  • Salt
  • Freshly ground black pepper

How do I make it?

  1. Heat barbecue or grill pan over high heat.
  2. Lay halloumi on a baking tray and lightly oil with ½ tablespoon olive oil, then grill for 2 minutes per side or until golden.
  3. Add watermelon to a bowl with mint, balsamic, and 1 tablespoon olive oil. Season with salt and pepper, then gently toss to combine.
  4. Arrange watermelon on a serving plate with halloumi and serve.
