Crispy Potato Stacks
Why just serve potatoes when you can serve these buttery, cheesy, stacks of goodness?

What do I need?
- 6 medium potatoes
- 2 tbsp chopped fresh oregano
- 2 tbsp chopped fresh thyme
- 2 cloves garlic, minced
- ½ cup salted butter, melted
- ½ cup parmesan cheese, grated
- ½ cup aged cheddar, grated
- Salt
- Freshly ground black pepper
How do I make it?
- Preheat oven to 200C.
- Lightly grease a 12-hole muffin pan.
- Cut potatoes into 2-millimetre-thick slices.
- Combine butter, oregano, thyme, garlic, parmesan, and cheddar in a large bowl and season with salt and pepper. Add potato slices and toss to coat.
- Arrange potato slices in the muffin pan, stacking slices to the top.
- Cover muffin pan with foil and place on a lined baking tray. Cook for 30 minutes, then remove foil and cook for a further 20 minutes or until the potatoes are tender and golden.
TOP TIPS
- A mandolin is ideal for achieving the thin slices needed for this recipe. If you don’t have one make sure you use a very sharp knife. For best results slice the potatoes as thinly as possible, ideally paper-thin slices.
