Crispy Potato Stacks

Why just serve potatoes when you can serve these buttery, cheesy, stacks of goodness?

What do I need?

  • 6 medium potatoes
  • 2 tbsp chopped fresh oregano
  • 2 tbsp chopped fresh thyme
  • 2 cloves garlic, minced
  • ½ cup salted butter, melted
  • ½ cup parmesan cheese, grated
  • ½ cup aged cheddar, grated
  • Salt
  • Freshly ground black pepper

How do I make it?

  1. Preheat oven to 200C.
  2. Lightly grease a 12-hole muffin pan.
  3. Cut potatoes into 2-millimetre-thick slices.
  4. Combine butter, oregano, thyme, garlic, parmesan, and cheddar in a large bowl and season with salt and pepper. Add potato slices and toss to coat.
  5. Arrange potato slices in the muffin pan, stacking slices to the top.
  6. Cover muffin pan with foil and place on a lined baking tray. Cook for 30 minutes, then remove foil and cook for a further 20 minutes or until the potatoes are tender and golden.

TOP TIPS

  • A mandolin is ideal for achieving the thin slices needed for this recipe. If you don’t have one make sure you use a very sharp knife. For best results slice the potatoes as thinly as possible, ideally paper-thin slices.
