Raw Carrot Salad

What do I need?

  • 6 large carrots, washed and peeled.
  • ¼ cup apple cider vinegar
  • 2 tbsp olive oil
  • 2 tbsp orange juice
  • 1 tsp wholegrain mustard
  • 1 tbsp maple syrup
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 ½ cups walnuts

How do I make it?

  1. Use a vegetable peeler to cut the carrots into ribbons and add to a large bowl.
  2. In a small bowl or jug combine apple cider vinegar, olive oil, orange juice, mustard, and maple syrup and whisk well. Season to taste.
  3. Pour dressing over carrots and toss to coat. Sprinkle with walnuts and serve.
