What do I need?
- 6 large carrots, washed and peeled.
- ¼ cup apple cider vinegar
- 2 tbsp olive oil
- 2 tbsp orange juice
- 1 tsp wholegrain mustard
- 1 tbsp maple syrup
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 ½ cups walnuts
How do I make it?
- Use a vegetable peeler to cut the carrots into ribbons and add to a large bowl.
- In a small bowl or jug combine apple cider vinegar, olive oil, orange juice, mustard, and maple syrup and whisk well. Season to taste.
- Pour dressing over carrots and toss to coat. Sprinkle with walnuts and serve.
