Chicken Waldorf Salad

This spin on the cult classic is a deliciously easy meal to prepare. Use a barbecued chicken or leftovers from a roast chicken and you’ll have a tasty lunch or dinner prepared in no time at all.

What do I need?

For the dressing

½ cup mayonnaise

2 tbsp wholegrain mustard

Juice of ½ lemon

For the salad

2 ½ cups cold chicken, roughly chopped

5 sticks celery, chopped

2 apples, cored and chopped

1 ½ cups red seedless grapes, cut into halves

1 ¼ cup walnuts, roughly chopped, divided

Salt, to taste

Pepper, to taste

How do I make it?

  1. Add dressing ingredients to a bowl and whisk to combine. Set aside.
  2. Add chicken, celery, apples, grapes and 1 cup walnuts to a large bowl, pour over dressing and toss well to coat.
  3. Serve on plates and top with reserved walnuts.
