Cheesy Baked Artichokes
Baked with garlic, thyme and gorgonzola cheese, these artichokes are a divine accompaniment to any special occasion meal.

What do I need?
- 1 artichoke
- Juice of 1 lemon
- ¼ cup olive oil
- 1 clove garlic, minced
- Leaves from 2 stems fresh thyme
- 60 g gorgonzola cheese
- Pinch of salt
- Pinch of freshly ground black pepper
How do I make it?
- Preheat oven to 200C.
- Fill a large bowl with water and add lemon juice.
- Remove most of the artichoke stem, leaving a small piece and then dip the artichoke in the lemon water.
- Slice the artichoke in half lengthways and dip again in lemon water.
- Use a spoon to remove the hairy “choke” from the middle of the artichoke.
- Add olive oil to a baking dish and place artichoke halves in the dish cut side up.
- Combine garlic, thyme, gorgonzola, salt, and pepper in a small bowl. Stuff the mixture into the centre of the artichoke halves filling the space where the choke was.
- Bake for 25 – 30 minutes or until the cheese is golden and melted, and the artichokes are tender.
TOP TIPS
- Artichokes turn brown when cut so dunking them in lemon water helps to prevent this discolouration.
- This recipe is based on a serving size of half an artichoke per person. You can quantities to suit the number of guests you are serving.
