Cropwell Bishop Stilton and Red Onion Chutney Rarebit Bites

What do I need?
- 300g Cropwell Bishop Blue Stilton, crumbled
- 2 eggs, beaten
- 1 tbsp wholegrain mustard
- 1 tbsp crème fraiche
- Freshly ground black pepper
- 8 small slice sourdough or walnut bread, halved
- 3 tbsp caramelised red onion chutney
How do I make it?
- Beat all ingredients except bread and chutney together in a small bowl to make the rarebit.
- Place bread on a baking tray and lightly toast both sides under a hot grill.
- Spread each slice of bread with some chutney and then pile rarebit mix on top.
- Grill for 3 to 5 minutes, or until golden and bubbling.
- Serve immediately.
