Cropwell Bishop Stilton and Red Onion Chutney Rarebit Bites

What do I need?

  • 300g Cropwell Bishop Blue Stilton, crumbled
  • 2 eggs, beaten
  • 1 tbsp wholegrain mustard
  • 1 tbsp crème fraiche
  • Freshly ground black pepper
  • 8 small slice sourdough or walnut bread, halved
  • 3 tbsp caramelised red onion chutney

How do I make it?

  1. Beat all ingredients except bread and chutney together in a small bowl to make the rarebit.
  2. Place bread on a baking tray and lightly toast both sides under a hot grill.
  3. Spread each slice of bread with some chutney and then pile rarebit mix on top.
  4. Grill for 3 to 5 minutes, or until golden and bubbling.
  5. Serve immediately.
