What do I need?
- 1 ¼ cups plain flour
- ¼ cup caster sugar
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 egg
- ½ tsp vanilla extract
- 1 ¼ cups buttermilk
- ¼ cup vegetable oil
- 4 medium apples, sliced into 1/2-centimetre-thick rounds
- Icing sugar, to serve
- Maple syrup, to serve
How do I make it?
- Add flour, caster sugar, baking powder bicarbonate of soda, cinnamon, nutmeg, egg, vanilla, buttermilk, and vegetable oil to a bowl and mix until smooth.
- Dip apple slices into pancake butter, ensuring the slices are fully coated.
- Heat a nonstick frying pan over medium heat and spray with cooking spray.
- Place coated apple slices in frying pan and cook until golden brown, flipping once.
- Serve sprinkled with icing sugar and drizzled with maple syrup.
