What do I need?

  • 1 ¼ cups plain flour
  • ¼ cup caster sugar
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 egg
  • ½ tsp vanilla extract
  • 1 ¼ cups buttermilk
  • ¼ cup vegetable oil
  • 4 medium apples, sliced into 1/2-centimetre-thick rounds
  • Icing sugar, to serve
  • Maple syrup, to serve

How do I make it?

  1. Add flour, caster sugar, baking powder bicarbonate of soda, cinnamon, nutmeg, egg, vanilla, buttermilk, and vegetable oil to a bowl and mix until smooth.
  2. Dip apple slices into pancake butter, ensuring the slices are fully coated.
  3. Heat a nonstick frying pan over medium heat and spray with cooking spray.
  4. Place coated apple slices in frying pan and cook until golden brown, flipping once.
  5. Serve sprinkled with icing sugar and drizzled with maple syrup.
