You’ll be Dad’s favourite for sure if you make him these delicious Egg and Bacon Tacos for breakfast.

What do I need?
1 large avocado, mashed
½ red onion, finely diced
Handful of coriander leaves, finely chopped
1 tbsp lemon juice
Pinch of salt
Pinch of freshly ground black pepper
6 rashers streaky bacon
How do I make it?
Add avocado, red onion, and coriander leaves to a small bowl and mix well. Squeeze over lemon juice and season with salt and pepper. Set aside.
Add tortillas, one at a time to a non stick frying pan over high heat. Cook, until the tortilla starts to colour, then flip and cook on the other side. Repeat for all tortillas, then cover with foil and set aside.
Add bacon to the frying pan, and cook until crispy or to your liking. Remove from the pan, place on a plate and cover with foil to keep warm.
Without wiping out the pan add eggs to frying pan and cook for 4 minutes or until the whites are set and the yolks are still runny.
Assemble tacos by adding a dollop of the avocado mixture to each tortilla, then top with bacon and egg. Garnish with coriander if desired and serve.
