Big Breakfast Stack
Treat dad to an awesomely good breakfast in bed. We’ve opted for a store-bought hollandaise to make it quick and easy to prepare but you can make your own if you prefer.

What do I need?
- 2 crusty bread rolls
- 100 g baby spinach
- 1 tbsp olive oil
- 2 eggs
- 90 g Huon Smoked Salmon
- 100 g hollandaise sauce
- 1 tsp chopped dill
How do I make it?
- Cut rolls in half and toast until golden brown.
- Add spinach to a frying pan with 1 teaspoon of water and cook over medium-high heat until wilted. Season with salt and pepper and set aside.
- Heat olive oil in a frying pan over medium heat. Crack in eggs and cook for 5 minutes or until the whites have set.
- Divide salmon between the bases of the rolls and top with spinach and eggs. Drizzle with hollandaise and garnish with dill. Add the top of the rolls and serve immediately.
