Blueberry Breakfast Bars
Beat the back-to-school breakfast blues with these delightful Blueberry Breakfast Bars. Make them in advance and freeze them so that you can grab one from the freezer at bedtime and wake up to a tasty and nutritious breakfast; ideal for a breakfast on the run on those busy school mornings.

What do I need?
- 150g fresh or frozen blueberries
- 150g mashed banana
- 150ml milk
- 2 tbsp butter, melted
- 250g rolled oats
- 2 tbsp maple syrup
- ½ tsp vanilla extract
- 1 tsp cinnamon
How do I make it?
- Preheat oven to 180C.
- Grease and line a 20 centimetre square cake tin.
- Add all ingredients, except blueberries to a mixing bowl and stir to combine. When ingredients are well-mixed, fold in blueberries gently.
- Add batter to the cake tin and cook for 20-25 minutes or until golden brown.
- Remove from oven and allow slice to cool in tin, then remove and slice into squares.
