Avocado mango and walnut salad
Fabulous flavours and textures make this salad a winning combination. Serve as is or top with grilled salmon or chicken.

What do I need?
- 1 large ripe mango, cubed
- 1 avocado, thinly sliced
- 8 cups of mixed lettuce, rocket and baby spinach
- ¼ cup chopped walnuts
- 60g soft goat cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp honey
- Salt and pepper to taste
How do I make it?
- Whisk olive oil, honey, lemon juice, salt and pepper, and 1 tablespoon of finely chopped walnuts together to make the dressing. Set aside.
- Place lettuce on a large serving platter and top with thinly sliced avocado and mango cubes. Sprinkle with walnuts and crumble over goat cheese.
- Drizzle with dressing and serve.
