Valentine’s Pomegranate Fizz
Toast your Valentine with this slightly tart pomegranate cocktail. You will need to prepare the pomegranate syrup in advance to allow it time to cool. The pomegranate syrup will keep in the fridge for one week and leftovers can be used to flavour sparkling or tonic water.

What do I need?
- 150 mL pomegranate juice
- 70 g caster sugar
- 70 mL apple cider vinegar
- 100 mL pink gin
- Sparkling Rosé
How do I make it?
- Add pomegranate juice and caster sugar to a small saucepan and gently heat until the sugar has dissolved. Remove from heat and stir in apple cider vinegar. Set aside to cool, then refrigerate.
- To make the cocktails, pour 50 mL of the prepared pomegranate mixture into a cocktail shaker with the gin and fill with ice. Shake vigorously, then strain into cocktail glasses and top with sparkling rosé.
