Lychee Lemonade
Cool off this summer with this refreshing iced drink.

What do I need?
- 20 lychees (canned)
- 120 mL syrup from the canned lychees
- 120 g sugar
- 60 mL freshly squeezed lemon juice
- 750 mL chilled water
How do I make it?
- Make a lychee syrup by adding lychees and syrup to a blender and blitz thoroughly.
- Strain through muslin into a small saucepan and discard pulp. Add sugar to the saucepan and cook over low heat until the sugar is fully dissolved. Bring the syrup to a boil and then turn off heat. Set aside to cool.
- To serve, pour some lychee syrup into each glass, add 15 mL lemon juice and top with chilled water. Stir and serve immediately.
