Blackberry Mojito Mocktail
This marvellous Mojito tastes amazing and because it is a mocktail you can enjoy as many as you like with no morning-after regrets! You’ll begin by making a syrup that forms the basis of the Mojito. This can be made in advance and kept in the fridge for up to 2 weeks. This recipe will make enough syrup for 10 drinks.

What do I need?
For the Syrup
- 2 cups fresh blackberries
- 3 cups water
- ½ cup honey
- 5 mint leaves
For the Mojitos (for 2 people)
- 1 cup blackberry syrup
- 1 cup soda water
- Juice of ½ a lime
How do I make it?
- Wash blackberries under running water, then add to a saucepan with water, honey and mint. Bring to the boil, then reduce to a simmer and cook for 15 minutes.
- Strain syrup through a sieve into a jar or jug. Refrigerate until ready to use.
- To make the Mojitos combine blackberry syrup, soda water, and lime juice in a jug. Pour mixture into ice-filled glasses and enjoy.
