Eggnog
Nothing says “Christmas” like a delicious glass of homemade eggnog. Try our easy recipe for some festive cheer that will have your guests feeling merry and bright.

What do I need?
- 6 egg yolks
- ½ cup caster sugar
- 1 cup cream
- 2 cups milk
- ½ tsp ground nutmeg
- Pinch of salt
- ¼ tsp vanilla extract
- ¼ cup brandy (optional)
How do I make it?
- Whisk egg yolks and sugar in a bowl until light and creamy.
- Add cream, milk, nutmeg, and salt to a saucepan over medium-high heat. Stir until the mixture reaches a gentle simmer.
- Add a large spoonful of the hot milk mixture to the eggs and whisk vigorously. Repeat, adding a spoonful of hot milk to the eggs at a time.
- When most of the hot milk has been added to the eggs, pour the mixture back into the saucepan and return to the heat. Whisk constantly until the mixture has thickened slightly, then remove from heat and add in vanilla and brandy.
- Strain through a fine mesh strainer into a jug, cover with clingfilm and refrigerate until chilled.
- Serve chilled.
TOP TIPS
- Don’t be tempted to rush adding the hot milk to the eggs. It is important to do this gradually to temper the eggs and avoid them scrambling.
- Brandy is the traditional alcohol ingredient of eggnog, but you can substitute it with rum, whisky, cognac, or bourbon if you prefer.
- Omit the alcohol for an eggnog the whole family can enjoy.
- To thin the eggnog out to serve, add a little milk and stir well.
- Eggnog will keep in the fridge for up to one week.
