Oven Roasted Seasoned Greek Tomatoes
Bring a touch of the Mediterranean to your festive season entertaining with this vegetarian entrée. Cherry tomatoes are seasoned with a variety of herbs and oven baked, then served with Greek yoghurt and crusty bread.

What do I need?
- 500 g cherry tomatoes
- 4 tbsp olive oil
- 1 tsp cumin seeds
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp brown sugar
- Zest of 1 lemon, divided
- Salt
- Freshly ground black pepper
- 6 sprigs fresh oregano
- 500 g Greek yoghurt
- 1 tsp chilli flakes
How do I make it?
- Preheat oven to 220C.
- Add tomatoes to a large bowl with olive oil, cumin seeds, garlic, thyme, brown sugar, half the lemon zest, salt and pepper. Toss to combine and then add to a baking tray. Scatter over oregano and cook in oven for 20 minutes.
- Whisk remaining lemon zest with yoghurt and season with salt to taste.
- To serve, add yoghurt to a large serving bowl and spoon tomatoes over the top. Garnish with chilli flakes and enjoy with bread.
