Roasted Pears with Roquefort, Walnuts and Honey

What do I need?
- 4 beurre bosc pears
- 2 tsp brown sugar
- 80 g Roquefort, crumbled
- 2 tbsp honey
- 10 walnuts, roughly chopped
- 1 tbsp thyme leaves
- 1 tsp chilli flakes, plus extra for garnish
How do I make it?
- Preheat oven to 180C.
- Cut pears in half, leaving the stems intact.
- Scoop out the core with a spoon and place pears on a baking tray cut-side up.
- Sprinkle brown sugar over the pears and cover with foil. Bake for 30 minutes or until soft but still holding their shape.
- Add Roquefort, honey, walnuts, thyme, and chilli flakes to a small bowl and mix to combine. Fill the pears with the filling and return to the oven to cook, uncovered for 8 – 10 minutes, or until the cheese has melted and the filling is hot.
