What do I need?

  • 1 cup ice
  • 1 tbsp lime juice
  • 1 cup tomato juice
  • ½ cup vodka
  • 1 tbsp Worcestershire sauce
  • 1 tsp Tabasco sauce
  • ½ tsp caster sugar
  • 2 stalks celery, finely diced
  • 2 tbsp cornichons, chopped
  • ½ small red onion, finely diced
  • 1 avocado, diced
  • 1 large tomato, diced
  • ½ continental cucumber, diced
  • 2 tbsp chives, finely chopped
  • 8 extra large, cooked prawns, peeled, deveined, tails on
  • Lime wedges, to serve

How do I make it?

  1. Combine ice, lime juice, tomato juice, vodka, Worcestershire sauce, Tabasco sauce, and caster sugar in a jug and stir well. Set aside.
  2. Add celery, cornichons, red onion, avocado, tomato, cucumber, and chives to a bowl and toss to combine.
  3. Pour tomato juice mixture into serving glasses, then spoon in chopped ingredients.
  4. Arrange prawns and a lime wedge on side of glasses and serve immediately.
