Pea Pods with Green Pesto
This fresh and light green pesto appetiser is topped with crisp sugar snap peas and crunchy walnuts. It’s the perfect summer entrée and it is vegan and dairy free. Serve it with crusty bread drizzled with a little extra virgin olive oil and a glass of chilled white wine.

What do I need?
- ¾ cup walnuts, chopped and divided
- 2 cloves garlic
- 1 ½ cups flat leaf parsley
- ½ cup coriander leaves
- 2 tsp lemon juice
- 1/3 cup olive oil
- 1 cup sugar snap or snow peas, divided
- Lemon slices to serve
How do I make it?
- Add garlic, parsley, coriander, lemon juice and olive oil to a food processor with ½ cup walnuts. Blitz on high speed until all ingredients are combined.
- Serve topped with remaining ¼ cup walnuts, lemon slices and fresh snow or sugar snap peas.
