Blue Cheese Crostini with Roasted Grapes and Thyme

Honestly, if you’re looking for an easy-to-make entrée/snack/finger food/lunch then this is it. Gently roasted grapes bursting with flavour are the perfect side-kick to blue cheese, and all you need to do is lay them on top of a fresh baguette and garnish with thyme for the most amazingly delicious flavour hit.

Makes approximately 20 slices


What do I need?

  • 2 cups seedless red grapes
  • 2 tbsp balsamic vinegar
  • 2 tsp olive oil
  • ½ tsp caster sugar
  • 1 baguette, cut into 20 slices
  • 200 g blue cheese, thinly sliced
  • Sprigs of fresh thyme to garnish

How do I make it?

  1. Preheat oven to 200C.
  2. Combine grapes, balsamic vinegar, olive oil, and caster sugar in a bowl and toss. Tip into a roasting dish and cook for 20 – 25 minutes or until the grapes are soft but still holding their shape. Remove from oven and set aside to cool.
  3. Meanwhile lightly toast or grill the baguette slices and set aside to cool.
  4. To serve, add cheese to the baguette slices and top with roasted grapes. Garnish with thyme.
