Blue Cheese Crostini with Roasted Grapes and Thyme
Honestly, if you’re looking for an easy-to-make entrée/snack/finger food/lunch then this is it. Gently roasted grapes bursting with flavour are the perfect side-kick to blue cheese, and all you need to do is lay them on top of a fresh baguette and garnish with thyme for the most amazingly delicious flavour hit.

Makes approximately 20 slices
What do I need?
- 2 cups seedless red grapes
- 2 tbsp balsamic vinegar
- 2 tsp olive oil
- ½ tsp caster sugar
- 1 baguette, cut into 20 slices
- 200 g blue cheese, thinly sliced
- Sprigs of fresh thyme to garnish
How do I make it?
- Preheat oven to 200C.
- Combine grapes, balsamic vinegar, olive oil, and caster sugar in a bowl and toss. Tip into a roasting dish and cook for 20 – 25 minutes or until the grapes are soft but still holding their shape. Remove from oven and set aside to cool.
- Meanwhile lightly toast or grill the baguette slices and set aside to cool.
- To serve, add cheese to the baguette slices and top with roasted grapes. Garnish with thyme.
