Baked Halloumi with Honey and Chilli

Creamy halloumi cheese is baked to perfection and infused with a blend of sweet honey and spicy chilli.

What do I need?

  • 500 g halloumi
  • ¼ tsp dried thyme
  • ¼ tsp dried oregano
  • ¼ tsp dried marjoram
  • ¼ tsp sumac
  • 1 red chilli, finely sliced
  • Zest and juice of ½ lemon
  • 1 tbsp olive oil
  • 2 tbsp honey
  • Fresh mint leaves, to serve

How do I make it?

  1. Score halloumi with a sharp knife, at 1 ½ centimetre intervals. Place halloumi into a baking dish. Combine thyme, oregano, marjoram, and sumac in a small bowl. Sprinkle herb mixture over the halloumi. Combine lemon zest with olive oil in a small bowl and pour over halloumi.
  2. Heat honey in the microwave in 15 second increments until it is warm and runny, then pour over the halloumi. Season with black pepper and bake for 30 minutes, basting with the pan juices every 10 minutes.
  3. Drizzle with lemon juice and garnish with mint leaves before serving with pita bread and salad.
