Creamy Avocado Hummus

This rich and creamy hummus is a mash-up (pun intended) of guacamole and hummus. Serve it with fresh vegetables for dunking and it’s the ideal entertainer; or try it spread on toast or in a sandwich.

What do I need?

  • 400g can chickpeas, drained
  • 2 ripe avocados
  • 3 tbsp olive oil
  • 1 ½ tbsp tahini
  • 3 tbsp freshly squeezed lime juice
  • 1 clove garlic
  • Pinch of cumin
  • Salt
  • Freshly ground black pepper
  • Avocado oil to drizzle
  • Chilli flakes to garnish
  • Edamame to garnish
  • Chick peas to garnish

How do I make it?

  1. Add chickpeas, avocado, olive oil, tahini, lime, garlic and cumin to a food processor and blend until smooth. Taste and season with salt and pepper as desired.
  2. Spoon into a serving bowl and drizzle with avocado oil. Sprinkle chilli flakes over the top and garnish with edamame and chick peas. Serve with pita chips and chopped vegetables for dipping.
