Baked Sweet Potato Chips
These crispy chips are baked, not fried and taste amazing. The secret to making these nice and crispy is patience - cook at low temperature for the ultimate crunch. Use a mandolin if you have one to achieve thin, uniform chips or slice thinly with a sharp knife.

What do I need?
- 300g sweet potato
- 4 tbsp olive oil
- Sea salt
How do I make it?
- Preheat oven to 130C.
- Scrub the skin of the sweet potato thoroughly or peel if you prefer.
- Using a mandolin or a knife cut sweet potatoes into thin slices.
- Toss slices in olive oil to lightly coat and lay in a single layer on a lined baking sheet.
- Sprinkle with sea salt and bake for about 2 hours, turning after 1 hour.
- Remove from oven when the chips are crispy and golden brown.
- Leave to rest for 5-10 minutes before serving – this will help them become extra crispy.
