Carrot and Almond Hummus

Switch your hummus up with this quick and easy Carrot and Almond Hummus. It’s versatile and makes a great dip but is also a lovely served with barbecued meat, fish or chicken.

What do I need?

  • 400 g can chickpeas, drained, liquid reserved
  • 2 large carrots, grated
  • 2 tbsp chopped almonds
  • ¼ tsp paprika
  • 1 clove garlic
  • Juice of 2 small lemons
  • ¼ cup olive oil
  • Salt and pepper

How do I make it?

  1. Add chickpeas, carrots, almonds, paprika and garlic to a food processor and blitz until finely chopped.
  2. Add lemon juice and olive oil and blitz until smooth. Taste and season if desired. If the hummus is too thick, add a little of the reserved chickpea liquid to thin it out.
