Cajun Scallops
Fresh Tassie scallops are tossed in a homemade aromatic Cajun blend of spices bringing a delightful kick to your dinner table. Pair with salad leaves and chilli jam for a quick and easy weeknight meal. If you’re time poor you can use a ready-made Cajun seasoning blend.

What do I need?
- 2 ½ tsp smoked paprika
- 2 tsp salt
- 2 tsp garlic powder
- 1 ¼ tsp dried oregano
- 1 ¼ tsp dried thyme
- 1 tsp freshly ground black pepper
- 1 tsp onion powder
- 1 tsp cayenne pepper
- ½ tsp chilli flakes
- 700 g scallops
- 2 tsp olive oil
- 1 red onion, thinly sliced into rings
- 2 tsp unsalted butter
- Chilli jam, to serve
- Salad leaves, to serve
How do I make it?
- Add paprika, salt, garlic powder, oregano, thyme, pepper, onion powder, cayenne, and chilli flakes to a small bowl and stir to combine.
- Pat scallops with paper towel to remove excess moisture. Set aside.
- Heat olive oil in a frying pan over high heat. Add onion and 1 tablespoon of Cajun seasoning and sauté for 3 minutes.
- Meanwhile, add scallops to bowl with Cajun seasoning and toss to coat. Add butter to the frying pan with the onion and allow to melt. Add scallops to pan and cook for 2 minutes per side.
- Remove from heat and serve scallops with chilli jam and topped with salad leaves.
