
Barbecued Corn with Thai Herb Butter
Fire up the barbecue for a twist on classic barbecued corn. Sweet, smoky kernels get a mouthwatering upgrade with Thai Herb Butter flavoured with Thai basil, coriander, ginger and a hint of chilli for a balance of heat and freshness.

What do I need?
- ½ cup unsalted butter, softened
- ¼ cup Thai basil, chopped
- ¼ cup coriander, chopped
- 1 tbsp freshly grated ginger
- 1 red chilli, deseeded, finely chopped
- 1 tsp finely grated lime zest
- Pinch of salt
- 6 corn cobs
How do I make it?
- Heat barbecue grill to medium high heat.
- Add butter, basil, coriander, ginger, red chilli, lime zest, and salt to a food processor and blitz to combine. Set aside.
- Peel back the husks and remove the silk from the corn, then return the husks so that they are covering the corn.
- Grill corn on the barbecue for 10 – 15 minutes, or until the husks are charred and the corn is tender.
- Remove corn from the barbecue and carefully peel back the husks.
- Spread corn with the butter mixture and serve hot.
