Seven Layer Mexican Dip Cups

Forget double-dipping with these individual cups. Ideal for a barbecue or outdoor entertaining, they’re full of Mexican flavour and require no cooking.

What do I need?

  • 435 g can refried beans
  • 35 g taco seasoning
  • 1 cup salsa
  • 1 cup guacamole
  • 240 mL sour cream
  • 1 cup finely grated cheddar
  • 1 red onion, finely diced
  • ¼ continental cucumber, finely diced
  • 2 tomatoes, diced
  • 70 g sliced black olives, drained
  • ½ cup sliced spring onions, green part only, to garnish
  • Tortilla chips, to serve

How do I make it?

  1. Add refried beans to a bowl with taco seasoning and stir to combine. 
  2. Spoon a layer of the beans and taco seasoning mix into the base of each cup, then add a layer of salsa, a layer of guacamole, and a layer of sour cream. Add a layer of cheddar cheese.
  3. In a bowl combine red onion, cucumber, and tomato and then layer this on top of the cheese. Top with olives and spring onions.
  4. Serve with tortilla chips.

TOP TIPS

  • Because the festive season is so busy, we’ve made this recipe as simple as possible by using store-bought taco seasoning, guacamole and salsa. If you prefer you can make your own to give these cups your own special spin.
