Seven Layer Mexican Dip Cups
Forget double-dipping with these individual cups. Ideal for a barbecue or outdoor entertaining, they’re full of Mexican flavour and require no cooking.

What do I need?
- 435 g can refried beans
- 35 g taco seasoning
- 1 cup salsa
- 1 cup guacamole
- 240 mL sour cream
- 1 cup finely grated cheddar
- 1 red onion, finely diced
- ¼ continental cucumber, finely diced
- 2 tomatoes, diced
- 70 g sliced black olives, drained
- ½ cup sliced spring onions, green part only, to garnish
- Tortilla chips, to serve
How do I make it?
- Add refried beans to a bowl with taco seasoning and stir to combine.
- Spoon a layer of the beans and taco seasoning mix into the base of each cup, then add a layer of salsa, a layer of guacamole, and a layer of sour cream. Add a layer of cheddar cheese.
- In a bowl combine red onion, cucumber, and tomato and then layer this on top of the cheese. Top with olives and spring onions.
- Serve with tortilla chips.

- Because the festive season is so busy, we’ve made this recipe as simple as possible by using store-bought taco seasoning, guacamole and salsa. If you prefer you can make your own to give these cups your own special spin.
