What do I need?

  • 1 baguette, cut into thick slices
  • 1 ½ cups feta, crumbled
  • ½ cup ricotta
  • 2 tbsp runny honey
  • 8 thin slices watermelon
  • Fresh thyme leaves, to serve

How do I make it?

  1. Place baguette slices on a lined baking tray under the oven grill and toast for a few minutes, until lightly crisp.
  2. Add feta, ricotta and honey to a food processor and blitz until smooth.
  3. Spread baguette slices with the whipped feta mix and top with a slice of watermelon.
  4. Sprinkle with thyme leaves and serve.
