What do I need?
- 1 baguette, cut into thick slices
- 1 ½ cups feta, crumbled
- ½ cup ricotta
- 2 tbsp runny honey
- 8 thin slices watermelon
- Fresh thyme leaves, to serve
How do I make it?
- Place baguette slices on a lined baking tray under the oven grill and toast for a few minutes, until lightly crisp.
- Add feta, ricotta and honey to a food processor and blitz until smooth.
- Spread baguette slices with the whipped feta mix and top with a slice of watermelon.
- Sprinkle with thyme leaves and serve.
